specialty coffees
Specialty coffees are those recognised by
roasters and consumers alike because of their distinctive
cup characteristics (organoleptic properties, such as a distinct
aroma or flavour and the absence of cup defects), its physical
properties (screen size, physical defects) and its cultural
practices (i.e., organic, shade grown, sun-dried). Specialty
coffees generally are grown in a very defined geographical
area, which guarantees consistency over time and traceability.
Above all, for a specialty coffee to retain its "characteristics",
it must not be mixed with "regular" and/or "commercial-grade"
coffee, and it must be well prepared, freshly roasted and
properly brewed.
